Happy New Year Fun and Traditions
It's traditional in the South to serve black-eyed peas and ham hocks on New Years Day. There's an old saying in the South that on New Years Day it is essential to have pork and under no circumstances have poultry. The reason being that if you eat poultry you will scratch backwards all year, while if you eat pork you will root ahead all year! Below are two recipes for you to try.
| Hopping John |
1 lb. bacon 2 lg. onions, diced 4 c. cooked black-eyed peas
2 c. canned tomatoes, diced 4 c. cooked rice |
Cut bacon into small pieces and fry until crisp.
Remove bacon and cook onions in bacon fat.
Drain grease.
Combine all ingredients and heat thoroughly.
Serve with cornbread. |
| Southern Black-Eyed Peas and Ham Hocks |
1lb dried black-eyed peas 3 ham hocks 2 tbsp. bacon drippings
1 med. onion, minced 1/4 tsp. black pepper 1 to 1 1/2 tsp. salt |
Sort and wash peas well. Place in a heavy saucepan or Dutch oven; cover with water.
Bring to a boil, and boil 2 min. Cover and let soak 1 hour. Add remaining ingredients to peas. Boil gently, not completely covered with lid, until tender (about 1 to 1 1/2 hours). Remove ham hocks from saucepan. Remove meat from bones, and return to peas. Yield: 8 servings. |
